Hi,
Are there any particular recommended flags for either the ATI 4830 or 5750 under guiminer? I don't intend to overclock either of them so as to not lower their life expectancy too much.
Also if possible could someone explain what the flags do? (ie. "-v", "-w128", "-k", etc.)

Heck, i wouldnt mind an answer to this either.  Searching around I cant seem to find a good answer as to what the purpose of the flags is.

-w is the worksize and as far as I know related to the memory.

you should try

-w128
-w192
-w256

and see which works best for you.

I have found that -v -w256 seems to work best on cards with unclocked memory.

(The guiminer readme is available here: https://github.com/Kiv/poclbm)

-v enables vectors, which is faster on some cards.
-w is for worksize, and varies by card.

In general, you should look at the flags listed for the highest performing entry for your card on the wiki here:

https://en.bitcoin.it/wiki/Mining_hardware_comparison

where it appears that "-v -w 128" yields good performance on a 5750.

i just started playing around with an old 4830 i have laying around.i found the best is -v  -w128  -f1.i also found that underclocking the memory below 700  cuts the hash rate.At 750/700 i get 75 Mhash.The latest version of sapphire Trixx works with the 4830
