Planning to setup a monero mining pool but I have no idea how much hashing power I have to deploy to find a first block in a decent timeframe. Any thought ?

Try your luck in the alt coin section.
You would also have to define what's a "decent time frame"? This goes from a day to a month depending on who you ask.

Regarding the timeframe I would say a couple of days, less than a week though.
