Ok, I send PMs and all I can ever read is what was sent to me.. am I just missing something or can't it be done?

Even if you use Bitcoin through Tor, the way transactions are handled by the network makes anonymity difficult to achieve. Do not expect your transactions to be anonymous unless you really know what you're doing.

When you send a PM you have to check the box labeled "Save a copy in my outbox" in order to view sent PMs

Sent PMs are not saved by default, to change that:
Go to 'Profile'
Click 'Personal Message Options' (left side)
Check the box that says 'Save a copy of each Personal Message in my outbox by default.'
Click 'Change Profile'
It will save messages in your outbox after you send them from now on.
