Does the Virtual Machine have internet access? If so, then it would not be as secure as cold storage. Additionally, there is still the risk of your primary machine holding the Virtual Machine to be compromised as it is connected to the internet. It may be more secure than storing it on your main machine but still not as secure as a true cold storage.

Anything that have access to the internet, shouldn't be considered as something safe, If you are speaking about Electrum servers, then no, the servers only know the addresses you are controlling and nothing else. If you are speaking about the servers of VMware or whatever software you are using then I doubt it as those companies have a reputation to maintain.

If you want something safe and you have a lot of bitcoins while contiuing to use them on a regular basis then I would go with Hardware wallets (Ledger Nano S) to be more specific.

+1 for hardware wallets in combo with Electrum.  I use a different one, but lets not split hairs here!

ps - the advantage of a hardware wallet is NO computer ever sees the private keys so they couldn't betray you even if they wanted to (malware, etc...).

no it wouldn't because the host machine has access to everything in the VM.

With regards to your title: You are trusting Electrum or your internet security when you decide to use the pre-compiled version of Electrum.

No. In fact, it would be the same as setting it up on your normal computer. If the host computer is compromised, the virus can easily read everything inside your virtual machine and the keystrokes will still be recorded.
