There are a few ways to make money with open source. You still can sell data from running those programs or the advertise in them. Some developers get paid to work on open source projects and some do it to boost their reputation. So there are ways to make money, but it's not so easy, that is why we have so few open source exchanges i guess.

Usually, people making open source programs don't really care about the money or they are doing it for the community/to build an online reputation/portoflio etc...

We don't have much bitcoin exchanges that are open source, some people might think It's that easy to build one but It's not (and It's not to use one that is already open source) because there are a lot of security measures that should be taken and the least error could lead into a disaster and getting users funds being stolen and the fact that bitcoin transaction are irreversible make this even worst, not to mention the fact that those open source scripts might have backdoors and someone without proper programming knowledge shouldn't use them.
I guess you could take PEATIO a look: https://github.com/peatio but you should know that the development is inactive as the last commit was in October 2015.

if you want youre exchanger can to big exchanger with very high volume transaction you must use self creattion not use open source, copy paste and use script or same another exchanger
if you still use not original script i think youre exchanger can down trust

Why do you need one, trying to run a scam and crappy exchange? because being lazy and having no coding/programming skills is mostly the reason for people to look for open source projects for services where the only advantage is being unique and complex and closed source.
Some exchange service provider if open source should be avoided, it's not like you could access private keys for having control over the coins anyways right?
Or maybe you'd like to play around with virtual (imaginary) coins eh?

Reason why apple has no viruses/trojans in their operating system is because no one other than their main developers have access to the source code.

most people that uses open source scripts intend to scam people, can you tell us why you want such scripts? most exchange sites have their own dev team to develop and grow, if you only plan to use open source scripts then it will be very hard for you to gain people's trust on their money to use your exchange. if you don't have a capital to start with it is better to ask few friends to invest in your plan, hire a professional dev team to help you create unique exchange site, after that some people might use your site

They show some pretty big exchanges running the software. It seems like a good place to start. Especially for countries where crypto is new.
