Amazon wouldn't as it would take away from their Amazon payments revenue. In a way by accepting it they'd be competing with themselves. The fact that they don't accept BTC isn't much of a deal breaker for most people so it wouldn't be worth it for them to accept BTC. The gains would not outweigh the potential loss of revenue.

With regards to eBay it's a little bit more complicated. Although from a financial perspective there's no reason for them not to, it would be a bit difficult in terms of their agreement with PayPal (despite their recent branching off). In an escalated case which requires some sort of resolution in terms of refunding, how would eBay/PayPal refund the money if the transaction was paid for in BTC?
However, eBay could accept BTC for listing fees only (as well as other payment forms) and insist that sales have to be paid in Fiat (like they currently do). That could increase their revenue by attracting the BTC crowds and allow them to maintain the protection they can afford to give buyers and sellers.
