I sent bitcoin with the fee set by Electrum 2.7.12 on May 4th - Dynamic Fees is/was enabled. It is still saying "low fee" and "expected confirmation time unknown". Can someone tell me how long I should expect this to take or if it will go through at all and if not when will it cancel itself or if it will?

I am extremely new to bitcoin, but this experience is enough to keep me from using it ever again!
You should upgrade to Electrum 2.8.2, there was a bug fixed which caused Dynamic Fees to not function correctly.
