Hi if I want to sign up with coinbase and buy ether; it appears coinbase has its own wallet to store the ether so is there anything else I need to do ? I'm a little confused

Transactions must be included in a block to be properly completed. When you send a transaction, it is broadcast to miners. Miners can then optionally include it in their next blocks. Miners will be more inclined to include your transaction if it has a higher transaction fee.

after you bought the coins you need to store them in a wallet of which you have the privat key. otherwise you just have to trust the owner of the wallet privat key. i don't know coinbase wallet. so you have to check yourself if you can access the privat keys.

You could try buying from Kraken, I recommend them highly. Since you are in Europe, you can pay with SEPA.Their SEPA deposits are very fast and you don't have to wait forever to have your account credited, most times,  it's done within twenty four hours. You could then trade for ether. At the moment, I wouldn't recommend coinbase,  I have nothing against them, they are good and reputable but their customer services sucks big time and I get the impression they don't care. It's just my opinion.

Another vote here for Kraken, used them recently, very impressed.
