Can I sell zcash in bittrex?

You can sell zcash in bittrex. BTC-ZEC only refers to the "market".
There are two buttons one for selling and one for buying.

You can just type ZEC into the search bar on the Bittrex main market page once logged in.

of course you can sell, your Zcash in bittrex ..
just go to your account on bittrex
then , you must sent your ZEC to Bittrex
after your ZEC is show in bittrex wallets ,, you can sell your ZEC to BTC

that is one market, you don't show two different names just by swapping the place of the coin name and its base market to create a new one to sell and another one for buy orders. you buy and sell (aka trade) in same place. and it is better for programming too. when you see the word "something-another thing" something is the altcoin and the another thing is the base market. like ZEC-BTC, which means you buy ZEC with bitcoin as far as API calls are concerned.
