I like the idea and I think it can be profitable, but I see some risks:
1) The above mentioned legal risk associated with non-registration of guests. I'm not an expert on this but I do not agree with the previous speakers. My knowledge is that in a few countries in the world is obliged to register the exact location of a tourist. You need to conduct a thorough legal analysis of this issue before choosing specific locations. Of course, there are certainly separate rules for the hotel industry, but do you have to call it hotel?
2) Financial risk associated with an anonymous customer not paying for the service and you will not be able to identify him. For me the smallest because of the possibility of prepayment by coins.
3) The risk that an anonymous guest will destroy / steal a room / apartment and you will not be able to identify him to take responsibility. Personally, I would solve this problem by purchasing a suitably wide insurance policy, of course, this will increase operational costs but it will take away your risk.
In summary, the idea is interesting and noteworthy, but needs to be refined from the legal side.

Be very wary of relying on JavaScript for security on crypto sites. The site can change the JavaScript at any time unless you take unusual precautions, and browsers are not generally known for their airtight security.

Apart from the point that every1 else said (being illegal in most countries, not being able to track vandalism, having a higher entry barrier if you force user to prepay their stay along with the insurance to get rid of the second problem mentioned etc.), I don't really see why would you need your own blockchain implementation to support this? What is the "software" that you will build? Couldn't that be implemented just by hotel accepting payments to their bitcoin/monero/zcash... wallet and not requiring users to ID themselves (and hotels don't have to change their software and retrain their stuff  - which is an enormous pain)? Also, who will be your target audience - scammers, cheaters, even robbers, rapists or worse ...? Can you really get hotels to willingly support this kind of customers just so they can rent a room or two more? I know there will be people who just want to be anonymous because of their ideology or they just don't want to tell their business partners they are actually on holidays somewhere etc., but your target audience is always people who see the greatest value in your idea, and your idea will definitely attract people from the first group I mentioned.
