Is there many UK based sports book betting that accept bitcoin and pay out in bitcoin or alt coins. Is there a big hole in the market for this that none of the big bookmakers have not got in on. Is there any reason for this.

There are several different types of Bitcoin clients. The most secure are full nodes like Bitcoin Core, which will follow the rules of the network no matter what miners do. Even if every miner decided to create 1000 bitcoins per block, full nodes would stick to the rules and reject those blocks.

What do you mean by UK based? Licensed in the UK, with an address in the UK or just accepting UK players?

As far as I know no Bitcoin bookmarkers are UK-licensed nor have an address in the UK.
