win7 is working very well and usually are supported better by mining software than win10.

Too expensive to run a farm on Windows. Expensive in money and time.
Just to start with Windows licences.

HiveOS is a cool thing, but all my rigs are on win10

Hive OS super stable, easy to manage on a larger scale, and has a lot of cool features which is constantly updating and adding new ones.
It's cool that they added RXboot  feature for RX 400/500 series cards.

I have no idea about mining on Mac ... I am using HiveOS on my mining rig and I'm very happy with. Usage is very simple with it's web based dashboard.
