What Ethereum miners do folks prefer in 2021? And why?

Ed: If mining with GPUs, what mining software does everyone recommend using?

Asic miners because they ROI faster but they are too costly, GPUs on the other hand will always bring you money even if they become obsolete someone out there will still want them, gpu is more useful for other things than Asic miners

Are you referring to ASIC or GPU? I'm currently using rx5700XT and RTX3080, these are the best graphics card for mining although not the most powerful, that will be RTX3090 but that thing heats up too much on memory temp, extra cooling will be needed

Some companies buy 3080 and 3090 video cards for mining, and if mining is not profitable, they will be used to train neural networks.
I would not call these video cards the best for mining because they have overheating problems.
I don't buy anything from video cards yet, because everything is very expensive.

You can't find any gpu right now until this bull season is over, buying cards at a high price for mining is already too late so it's better to wait till bear market gets here before building any mining rigs

Yeah i know it will be stupid pay 500$ for rx580. instead i can use that money buying coins and earn more than mining in 2-3 weeks.

Although it is not an answer to your question. ASIC miners as well as GPUs are incredibly expensive in this bull market. Consider buying coins or wait for the next bear market.
