Exchange site for European with easiest registration/verification?

All exchange sites at first looks like you just have to register your email. But very soon comes with additional verifications etc.

FACTS: I want to buy Bitcoin, LTC and other common coins. Store them on paper later. Im from Europe. But currently in Asia.

Which exchange site is easiest to use for me? (I will use big verified sites like Bittrex only)
