The scope of the project is to connect Farmers and final Users and yes you will know exactly from who are you buying and what.

It's not necessary connect all the farmers to get the concept working, even it will be in their interest to join the Demeter platform since they would get a better return for their job and at same time have the chance to offer a better quality food to customers.

Just for reference, we already received partnership requests from farmers in countries where we are not operative yet. So there is quite interest in the concept from farmer side.
