Why people try to create their own coins?

Because such ICO projects are very profitable. You can create a project and spend your ICO, it will certainly take a lot of time and money, but as a result you can get much more.

Why do people do anything? Of course, to change the world for the better. Not everyone is covered by such a rush, but those who create a new cryptocurrency, think so. I have not heard of more than one project that would be created only for profit, and was successful. In a case like this, you always have to be a little enthusiastic. I think you should understand. This is the desire to make human payments safer and life more colorful. It's nice to help people, isn't it? And if you are paid for it, so it is generally "beauty", if I may say so.

Reasons vary from person to person. Some want to finance their projects, other wants to make quick money.

Yes, I agree with you because these are some of the reasons why people try to create their own coin and moreover, some of them are legit while some are shitcoin but I think people should  be more focused on building a project or coin that will help the crypto users and even solve some problems rather than just building a project without good ideas or just to extort money from investors.

Its not a waste of time at all. Coins were created for the exact same reasons they created new projects.
The idea is to develop its own coin so people will buy that coin to avail the product or the services they want.

It is hard to create your own coin you will still need funds and investors are very vigilant they will recognize if your coin just a copy by reading whitepaper

Yes, it is. There are too many projects that share the same ideas and purposes for their products. But in general, I think that some of them are trying to eliminate the mistakes of previous projects and thus to gather more investors.
