2. When you download the wallet do you need to do addnodes and join a pool or can you just let it sync then buy coins and start staking?

As you know very well, the more the better.
I started with 10k and it took 7 days to get a reward, but it depends on the network weight.
I bought more since, and keeping stack size of 10K+ and it seems staking every 3 to 5 days.
You may need no conf file to add nodes but you can create the file and add nodes if it does not auto-sync.
The stake percentage for Go is probably higher than 808, but 808 is so cheap to buy many more coins thus you can get more rewards.

There is a mandatory update for the XGOX wallet to V2.1
The wallet includes the following:

1. A fork at block 150,000
2. Re-branding to XGOX
3. Fix for PoS reward schedule
4. Auto creation xgox.conf file
5. Anti-inflationary measure: Block 500,000 plus will only be only 1000% (Based on market research of other coins)

Please note that this will create a new xgox directory. Please ensure you backup your GoCoin wallet.dat file from the GoCoin folder, and replace the wallet.dat file in the new xgox directory with you GoCoin wallet.dat file. The fork is expected around mid December 2017, so please update before the 10th of December 2017.
