How are they calculated? At first I thought it was 100-(number_of_wins/number_of_losses), but it didn't make any sense.

Once a transaction has 6 confirmations, it is extremely unlikely that an attacker without at least 50% of the network's computation power would be able to reverse it.

number_of_wins / number_of_rolls seems like the obvious way to calculate it.

Except games like satoshidice don't roll as far as I know, they just hash the hash of your tx(just once) along with some secret seed. Plus if the number of wins is 0, then the Win odds will be inaccurate.
