Why isn't there an option for the AMD Vega 56 and 64's on whattomine.com?

Probably because mining Cryptonight is the only thing to know if you want to mine the most profitable.

Yes, mining cryptonight is the best thing for RX VEGAs as of the moment. Although the actual GPU isn't listed on whattomine yet, you can do a manual computation. Just go to the "coins" tab then select "electroneum." Once selected you will be brought to a page where you will be able to input hashrate and power consumption. Just place 1950 for hashrate and 150w for power consumption. Should give you a fairly accurate estimate.

Please understand that if you are new and your hashes don't add "value", they won't count.  The pool just takes them.  You should probably just invest in the next inflatable donut.
