Building a rig but I'm newbie and feel like I dont understand something.

Here is the risers I think I need

https://www.amazon.com/6-Pin-Powered-PCI-E-Express-Riser/dp/B06Y239M26/ref=sr_1_1?ie=UTF8&qid=1504517913&sr=8-1-spons&keywords=006c+riser&psc=1

Problem is they say 6 pin but the 1080ti's are 8 pin so how does that exactly work.

I also heard people say connect them via the molex connector. Where do I get these cords from?

You'll need to plug 2x 8 pin connectors into your 1080ti, then one 6 pin into  your riser, and the usb of the riser into your MOBO.
If you dont have enough 6/8pin connectors, you can use the supplied sata - 6 pin adapter provided with the risers, it's not recommended though as they have been known to melt. I've used them on some cards for a while though no problem, but be aware it can cause issues.

Thanks for the reply, so I should buy a few extra of these?

If your PSU doesn't have 8pins, Yes, you should buy those splitters, take note that 1080ti's also draws a lot of power, ensure you have enough Psu watts rating to handle those beast.
