I have 2 cards, an NVIDIA Quadro FX 500, and a Radeon HD 7850. I currently have the 7850 in for gaming, but I wonder... If I pop the Quadro in, can I have that JUST for mining, and the 7850 just for gaming? If so, do I have to CrossFire/SLI?

You will just need to mine with whichever one you want, and then the other will be free for gaming.

With CGMiner you would do it by adding -d 0 or -d 1 (which selects the device you will be mining with)

With GUIMiner you would just select the card you want to mine with, and then let it go.

NVIDIA is crap to mine with though, so you won't get very good results.

...always keep in mind that mining is far away from 'bitcoins for free', it's running infrastructure, you have to consider costs for electricity and replacement parts as well as heat and noise
