Best Iphone for Crypto?

Hello!, I lived In an underdeveloped country and my sister came back from the U.S. with 3 Iphones to gift me.
Iphone SE, Iphone 6 and Iphone 7. I obviously want to sell them, As of right now, Im using the SE.
As far as I know Iphones are encrypted, so their security is excellent. Im also aware that Iphone models get quickly replace by new ones, especially because old ones stop getting upgrades.
Are these upgrades important for crypto usecases? Does an Iphone get less secure with time?
What do you suggest? What Iphone should I keep?
