I know that is for client run as server mode.

Then what happen? It does not try to connect to others and only receiving request other nodes?

What if there more than 2 server mode nodes?

From the bitcoin wiki:

Code:
server=1 tells Bitcoin-Qt and bitcoind to accept JSON-RPC commands

so unless you're planning to use JSON-RPC interface, there is no need to activate it.
