I have just gotten into Bitcoin and set up my GPU to generate coins.

My question is when my GPU is active is it generating despite the fact I don't have the Generate Coin Setting in Bitcoin checked?

I do not want my CPU generating (Since its not stable) but only my GPU. Am I achieving this by not having the setting "Generate Coins" checked?

Also currently with a 5870 how long would it take for me to make a coin? Or does one make 50 at a time?

You're looking at an average of about 4 days with one 5870 to mine a block, being 50 bitcoins.  If you'd prefer a more steady payout, look into pooled mining.  I've currently got 2 5870s and quite a few other miners going on slush's pool (see thread titled Cooperative Mining).  You can expect about 12 BTC a day at the current difficulty from his pool with the minimum donation.

Could I start a pool of my own with multiple computers of my own? Is it an easy task?

If not I would consider it.

But am I currently generating coins with my question stated above or is my GPU just burning up for no reason?

You do not need the "generate" option checked to mine with your gpu.  And you can pool multiple computers together on your own, just point them to the bitcoin client the same as your gpuminer, but with your lan ip instead of localhost/127.0.0.1.  Also, there there is other pool software available as an alternative to mining directly for the bitcoin client.  I've not run a pool, so I don't really know what the advantages of each method are.
