If I were to 'solo mine' with a handful of nodes with 5970 GPUs, would there be any advantage to running multiple bitcoin servers to have them connect to?  I'm wondering if my mining efficiency will scale perfectly if they all connect to one server, or if there is a loss introduced when multiple clients are getting work from the same server.

There shouldn't be any loss with many miners on one server. Slush's pool is running on one single Bitcoin server.
