Hi! I am new to this kind of mining, is it normal that I always have to add some eth to myetherwallet to go on mining, 3 or 5 dollars in eth is enough only for 1-2 hours of mining, thanks in advance.

As i known, you need setup gas parameters in the config file. You can set gas price=5 and wait a long time (so your chances to mine coin will be = 0), or you can set gas price = 50 on good hardware and get all coins?

The gas price and power of hardware should be balanced. If the difficulty in the net increases most probably your solutions will be reverted having the gas price equal to 4-5. You need to monitor the network constantly to have that balance or just set the general gas price equal to 10 - 15.
The miner with huge gas price (for example 50) is not able to suppress all miner and take all coins.

Access to the document can be gained only through the cryptographic keys that the sender and recipient have.

If im correctly understood everything in case of any problems, even you will not have access to the documents? And if im turns out that the recipient has lost the keys and the sender will write to you so that you can help you recover, you can not do it?

If you mined a block, then you would have a SEDO token transaction.
If you participated, but did not receive a block, you would have such a transaction:
