the NVIDIA Tesla C2070 is rated at  749.23 Mhs and my Antminer is rated at 180/Mh/s

this beg the question for me....

why not build a rig with the Tesla and mine over 3 times as fast - what am I missing?

The Antminer's measurement is in gigahash per second - the amount of calculations per second it is using to try to solve the next block.  Each chip in the S1 is actually running at about 350 Mh or megahertz - 350 million cycles per second.  Each chip is specifically designed to generate solutions to bitcoin type calculations - or SHA256

The Nvidia card's chip is running at 750 Megahertz - which means how many cycles per second - not how many hashes it is generating.  As the chip in these aren't designed for doing this type of calculations, they aren't geared toward this type of work.

As Gh or Mh are commonly used in computers (and bitcoins) it is just assumed that people are usually picking up on the difference between hashes/second or cycles/second.  In bitcoin equipment, when talking about computing power - they are likely taking about hashes (solutions) per second.
