Is it enough to change the address to the bitcoin exe file and add -rescan as a parameter?

The installation file should have overwritten old files thus adding -rescan shouldn't be needed. Bitcoin Core and your wallet location should be the same as before the upgrade.

Usually, you shouldn't need to do anything.
You can continue using your shortcut and do not need to rescan.

Are you running into any trouble or is this more of a generic question ?

Unless you're using ancient Bitcoin Qt (0.7.x or lower), the upgrade process will be done automatically and all you have to do is wait.
If you encounter any problem on automatic upgrade, please share debug.log

Please try as mentioned here:
https://bitcoin.org/en/release/v0.18.1#wallet-gui

It is also said in the link provided that "Upgrading directly from 0.7.x and earlier without redownloading the blockchain is not supported." So yeah, that's one kind of an extra step OP needs to take before continuing with the upgrade.

I personally just shutdown the wallet, grab the zip file, extract the binaries, and copy them over to my bitcoin folder. When I launch the wallet, it's upgraded. You can use the same shortcuts too.

Issues will only happen if upgrading from a much older version, but if you have the wallet file, it's the same as resyncing from scratch; you'll just download the entire blockchain again.
