But if i were to enter those seeds in another device... whether electrum or another nano ledger for example... it would show the seed is correct right?  But it would show 0 balance?
Do it in Electrum. It doesn't matter if that seed goes online because you never sent anything to it. When you restore your wallet from seed in Electrum you will have to tick the BIP-39 seed option. Even if the seed wasn't written down correctly, Electrum will still restore a wallet, even if it's not the one you wanted. It's going to show a 0 balance. 

I didn't use ledger recovery app.  I know the seed i entered is correct... but i want to make sure its the one linked to the seed where i sent my btc from electrum to it... and not one of those other seeds where i create and reset it.  Does that make sense?

It either is or it isn't. You are the only one who knows how and where you sent your money. No one can help you with that. If you generated a 3rd seed, created a receiving address with it, and send coins to that address, that's where your coins are. On an address that stems from your 3rd seed.
If you still have doubts, keep those cards where you wrote down the seed phrases #1 and #2 just in case. Let's close this chapter please! 

But besides using electrum as watching only wallet.. is there a way to do this without it?  I still haven't updated electrum and i really don't want to touch it anymore.  But if you download malware electrum, that still won't do anything since its watching only right?

If you have all your accounts added in Ledger Live (except your hidden passphrase-protected account), you have a way to look at your complete portfolio, and you can do that even without Electrum. With Electrum, you can only check your bitcoin. You also have BCH if I remember correctly.   

To make it simple.  Say you have 3 btc in your ledger live account and its like that for a while.  Then months ago, with your replacement nano ledger... you done your first ever transaction with it after of course restoring the old nano ledger seed.  You received like 0.0005 btc to make it simple.  So when you did this, you connect ledger to laptop... click receive tab... it generate a btc receiving address... you copy/paste that to the site who will send you btc.  Then bit later, you receive the btc to your ledger wallet as it shows in the latest transactions... but not only that... your btc balance now shows 3.0005 btc as it should be on portfolio... and it shows 3.0005 btc on the accounts tab of btc 1 segwit. So that confirms you have full access to all that 3.0005 btc right?

Yes. If you sent the coins to an address you generated on Ledger Live and you verified that receiving address matches the one displayed on the screen of your Nano S. The updated balance now belongs to you. 

For example let say you had multiple accounts and seeds in your ledger live.  Imagine you use two different nano ledgers with.  Let say one nano ledger you use has 3 btc and another one has 2 btc.  On the portfolio page, would it combine the balances of both your nano ledger/seeds?  But what about in accounts?  Would you see the total combined of 5 btc in the account named btc 1 segwit?  Or would it show 2 different bitcoin segwit accounts such as one has 3 btc and another one has 2 btc balance?
I am not sure exactly. I don't have multiple seed phrases across multiple devices. Neither do you. You have the same recovery phrase in 2 Nano S's. There is no reason to make it any more complicated than it already is.

Because had i put in a correct seed but that one was no balance... wouldn't my ledger live portfolio and accounts history still looked the same though had i not deleted those accounts?

1. Delete all your accounts in Ledger Live, so when you open it, it shows a total balance of 0.
2. Then reset your Nano S to factory settings.
3. Recover your accounts by entering your 3rd seed in Nano S.
4. Install your BTC and BCH crypto apps.
5. Scan all your accounts.

Ledger Live will add all accounts and show you the total balance of them.
