Just a suggestion, but it would be attractive maybe if you would play again immediately, until pot gets to X% of the initial sum, or pot gets below the min bet. For instance, "double or nothing". But probably too late as you already wrote conditions

Sure, there are lots of ways to spice it up. There just hasn't really been an interest in playing a pool bet anymore. Heck, even now there's only myself and Jo in the pool.

Don't do this. All my promotional games are operated on-chain so using a third-party service such as Coinbase, an off-chain gambling site, an exchange, or other service where you do not control your keys could risk you not being credited with your winnings.
