The fact that bookmakers are the ones that you take to court for the unpaid bets is not enough to claim that when you bet you are "playing against them". You are talking about a procedural issue, but I think that the OP was asking about a more phylosophical one one (who are you gambling against, in the end?).

Take for example a car accident: deep down, you go against the one who caused it, even though if in court you may end going against his/her insurer because they don't pay you.

You are not playing against other players if you are playing centralized sportsbook. This is only applicable on decentralized sportsbook like polymarket since the odds varies depending on the bets made both sides.

I often participate in sports betting but my analysis does not always correct there and it is normal. Moreover, I do not think that good teams always win in sports betting. I can't doubt this because a lot of factors have to be considered before sportsbooks will come up with their odds, and even in casinos, the sophistication of the system is not child's play, there must be enough investments in the development of the superb algorithms that will be best befitting in doing the bidding of the house. All these can't be done manually and be as fast and accurate as they are, especially in protecting the interest of the house.
