Happy New Year to you all.

I am happy to still be part of this year’s contest. The delicacy that I made this time was very delicious and stressful. I was working nonstop just to be able to prepare this delicacy. I prepared pounded yam with vegetable soup and assorted meat pepper soup, which I also enjoyed. Even though the process of making it was a bit stressful for me, most especially the pounding process, I had fun doing it. That is also the benefit of doing things yourself.

NAIJA FOOD CONTEST (CHRISTMAS AND NEW YEAR CONTEST)

I want to first thank our able Mia Chloe for organizing this wonderful food contest. It indeed brought out the best in us and know well how our cultural foods can be well prepared and not forget our heritage too.

About the meal:
In this contest, I prepared Tuwon Rice (a mold rice after being marshed) and Miyan Wake (Beans soup). This is a food popularly known within northern Nigeria and also the native food of the Nupe people from the northern part of Nigeria. Many people from the south may not yet be familiar with this recipe. It is served mostly in occasions and way to show their cultural heritage in those regions.

Ingredients used:
(Swallow and Soup)
Rice
Beans
Salt
Different types of assorted Seasonings
Dry fish
Fresh pepper
Onions
Palm oil

(For the pepper soup preparation)
Cat fish
Dry ginger
Onions
Pepper
Different types of seasonings
Salt

Process:
Preparation of the swallow-
The rice is first washed, then placed on fire and over boiled to become very very soft, this allows it be molded easily.

Preparation of the soup-
After washing the beans, it is placed on a mortar and pounded softly first in order for the peel cover of the beans to be removed. It is then separated from the main beans.

The beans is now then placed on fire and then overboiled, all ingredients to be used for the soup are simultaneously put in together and it is continued to be boiled until the beans and all ingredients in the pot to get a yellowish colour.

To get a smoother texture, a neat kitchen broom is used to stir it more and get the best result.

Preparation for the pepper soup-
The cat fish is first washed with hot water, then placed inside the pot.

Then add all seasonings, and make sure you add more pepper to make it pepperish because that’s what makes it to be called pepper soup.

Boil for some minutes until the desired taste is achieved. Best served hot and simmer.

For the season of love and the celebration of the new year. I was able to extend and also share the food to the less privileged around. They were so happy and the smiles on their faces means a lot as I share the food to them with much love. “This 2026, let’s share love, let love lead” from the little things we can do to put smiles on people’s face. They were camera shy, but I got to capture those beautiful moments with laughter in their smiles.

HAPPY PROSPEROUS NEW YEAR TO MY NIGERIAN BROTHERS AND SISTERS.

I am really happy to participate in this Nigeria food contest, today I was able to prepare afan soup. Afan soup is a Nigeria delicacy and it's also my favourite soup. Just a Breaf history of Afan soup, Afan soup is originated by the efik and ibibio people of cross river state and akwa ibom state, Nigeria.

HERE ARE THE INGREDIENTS FOR PREPARING AFAN SOUP:
Afan leaf
Water leaf
Red oil
Periwinkle
Stock fish
Meat
Ponmor
Smoke fish
Grey fish
Onion
Maggi
Salt
Pepper
Water

When you are preparing Afan soup, you start by washing and cutting Afan leaf and water leaf, then set them aside. Wash your meat, stockfish, ponmor and periwinkle into your pot, add your seasoning and cook for a while. Then, the water leaf and Afan leaves are added and stirred. The soup is cooked for a little while to preserve the leaves nutrients, then adjusted for the taste and served, usually with fufu, garri or pounded yam.

I'm proud of how it came out at last after all my struggle 😂

Nigerian Healthy Diet

Introduction
Nigerian food is not just delicious but healthy. Our ancestors carefully chose ingredients not just to make food tasty, fanciful, or satisfying but to keep the body fit. So if you come across a Nigerian meal, don't just eat it, ask the caterer or cook what are the health benefits of some of the ingredients.

The Nigerian pepper soup is a meal that contains some of these ingredients. To make the meal more peppery, Nigerians usually combine different types of pepper. I am going to give a brief explanation of some of the health benefits of some unknown ingredients and a link for further reading.

Uda Pepper (Negro pepper or Ashanti pepper): It contains gingerol that can help relieve joint and muscle pain.  This seed also contains magnesium, a mineral important for heart health and regulating blood pressure. Uda also contains shogaol, which is helpful in combating harmful bacteria and fungi in the body. Those who suffer from indigestion would find Uda helpful because it stimulates the production of digestive juices and enzymes that break down food. Some research also claims that this seed could also help with weight loss. There are so many other medicinal benefits of this African plant.

2. Uziza Seed (Ata iyere, Ata iyere or Piper guineense): This seed contains a certain percentage of beta-caryophyllene, an anti-inflammatory agent. It contains essential minerals like tannins, alkaloids, glycosides, steroids, flavonoids, saponins, phenols, and peptides, which have some health benefits.

3. Ehuru Seed
(Monodora myristica, or calabash nutmeg): This seed is traditionally used in the treatment of arthritis, diarrhea, diabetes, stomach ache, and sexual impotency.  It also contains vital vitamins like potassium, calcium, manganese, iron, zinc, copper, phosphorus, magnesium, and vital B-complex vitamins, including vitamin C, folic acid, riboflavin, niacin, vitamin A, and many flavonoid antioxidants.

1. Pregnant Women: Uda, Uziza, and hot pepper could cause abortion.
