I think we will never see costly bitcoin transaction fee anymore, this bull market came and go without any network congestion or insane transaction fee like in the past years.
No thing has changed in the way Bitcoin works since the last Bull run.  As long as the Network continues to grow, by the time there will be more excitement in the Market the Fees will easily sky rocket again.
Moreover, the surge occurred because of Protocols such as Ordinal which is said to provide new innovations to the bitcoin Main Network But in the end it puts more burden on the main network which makes the transaction surge quite crazy so that transaction fees have increased extraordinarily.

With the reason for the surge in transactions that made the cost more expensive, people started using the Ligthning Network for speed and cheaper fees, but the development of LN was also never clear and some developers stopped developing it.

There are now several Bitcoin Layer 2 Networks such as Stacks (STX) to Play DeFi/NFTs on Bitcoin, Rootstock (RSK) Using Ethereum-style Applications and Rollups (Merlin/B²) Is the Most Advanced Technology for Layer 2 Bitcoin today that combines high speed with maximum security Bitcoin, is still new enough that the ecosystem is still not developed.

Since Bitcoin Lightening Network is the fastest way to make payment using Bitcoin, as a store owner who wants to start accepting Bitcoin as a means of payment are you going to start telling customers to use Lightning network rather than normal Bitcoin transaction?
LN was widely adopted by online stores and some major wallet clients when the network faced unprecedented congestion (tens of topics discussing LN in bitcointalk and public forums). The result was unexpected; few users prefered to used it at the time of congested network, while the rest migrated to stablecoins (USDT pairs). Actually the bitcoin transactions become cheaper and faster, so no need to complicate life with LN. At the same time, the stablecoin market becoming bigger at a large scale.

It's always better to give option to the customer and not force a single way. So if you do accept bitcoin, I would say take legacy, segwit, LN, whatever you can. Doesn't mean you have to, you could always just not offer it if you do not want to, but if you do, and someone asks, it's better to have it and not use it than not have it when you need to.

As someone who used to run a shop, we offered everything, from our local fiat, to foreign currency, to crypto of all sorts, in many ways, credit card, QR code, any type of payment you can think of from mobile like apple pay, basically we offered all possible ways so they would not have a reason to not buy something if they want to buy it and that's how you get better.
