Escrow works by sending your funds to a third party who holds it until the buyer and the seller are both satisfied.
Once satisfied, the escrow agent sends the funds to the appropriate party i.e the seller.

This way nobody is scammed.  If you still don't understand and don't like it. Consider sending first.
If you don't agree to it,well I'm sorry to say GTFO.
