That's a great price but is pretty limited for anyone wanting to expand beyond 2 cards. You don't want anything else on the same molex to pcie line as a video card, especially if your overclocking. I like that it has a single rail and is 80 plus though. Do they accept Bitcoins?

btcbuy.info you can get a giftcard for newegg.  Last time I used it for newegg it took a day or two to go through (the gift card is electronic), so you might miss the one day deal.

My logic at the moment is two 750s is cheaper than one 1500.  Right now I'm running one 750, one 500, and one 600 to drive 4x5870 on one rig.  This will reduce it to one 750 and one 640, which is still cheaper than a 1500.

I assume that 80 PLUS supplies and running a bunch of 5870s (as opposed to something like the 5970/7970) means that electricity is free/cheap for you?

If that is the case, why not get a 1000W PSU to power the whole thing?

What is wrong with this unit? Besides not meeting it's 80PLUS Gold which apparently doesn't matter to the OP, it is an excellent deal for true 1000W of power. Besides if you go to conclusion you'll see that they give it a pass, which is harder to obtain than a fail according to HardOCP's testing methodology, indicating this power supply is of above average quality. If you ignore the false 80PLUS Gold claim, this system easily takes the cake amongst sub-$100 1000W power supplies, most of which won't even put out 1000W. Even the conclusion praises the Watts/$ value of this system.

As such, on a strictly dollar based value assessment, this unit is a good buy so long as users are only looking for a power supply that will provides 1000 watts of power inside of the ATX12v specification limits and nothing more.

It's not like most cheapy 750w and 640W power supplies like the OP has does much better.

The 750 is an Antec http://www.newegg.com/Product/Product.aspx?Item=N82E16817371026.  Seemed high enough quality to me.

I'm not an expert on power supplies though, so feel free to enlighten me.

Now the 600 that is there now is a cheapy (I got it free AR many years ago), and 500 has a 5 year warranty that expired a year ago.  That's why I'm replacing both with one 640.

I'll summarize for you:

Soldering job looks terrible. I've soldered more cleanly on protoype board than this unit.

Fails crossload test miserably. (Although unlikely to see such a situation while mining).

Doesn't come with power cable?

No OCP. If you accidentally draw too much power (an easy thing to do with only 620W available to you), bye bye MOSFETs.

I used the own the EA750, and it is a POS. It is expensive as hell and gives shitty ripple supression. I could load the unit so hard with an i7-920 and 2x GTX570 that the system would be unstable even though I was well short of the 750W limit. There are far better 750W PSUs than that one.

Hmm.  Since everything is made in China anymore, it's always a gamble what you get.  Yes I could spend a lot more on power supplies and significantly cut into my profits.. or I could take a chance with something with a 3 year warranty that'll probably work out just fine for me.
