you could dump the wallet, then delete the wallet, create a new wallet file, then reimport the ones you want to keep, but why delete, just reuse that is what I do, I have about 50 address and I just keep reusing them, unless your super paranoid.

There is no easy way to delete addresses, as mentioned you can delete them manually from your wallet file by copying it, but there is no real reason to do this other than preventing the client from getting too cluttered.

How do you delete addresses in the bitcoin client?

The ability to remove a key is not yet in the client, but the Bitcoin source 'main" trunk has support fo "removeprivkey' (so a custom build of the client would support it).
