Bitcoin is the daddy coin (maybe not the most profitable for mining, but, mining supports a coin, and I support Bitcoin), and I also like to use up all available resources, so I mine YAC at the same time (YAC is the only CPU-only coin ATM) K. Is there a list somewhere of all/most coins, pools, etc.? coinchoose.com looks like the best list of coins I have seen so far (been using it with bitcoin for some time). It is one of the most mined coins and has been stable price wise for weeks now, after the jump from 50 cents, and everyone simply regards it to be the silver to bitcoin as gold. It was also launched October 9, 2011, so that shows that it's hanging around.
Otherwise, it depends what you want. The most profitable to mine, as of now, is Powercoin. The most CPU friendly is still YaCoin (out of coins that aren't regarded to as 'dead'.
