Which chat programs are out there, which encrypt all data you send/receive?
I want to be in control of the keys, and preferably the software should be open source.

gibberbot. It uses facebook's xmpp server and lets you have encrypted chat with fb friends.

Hi, try to use BitMessage, is a good program which work with the same method of Bitcoin :)

BitMessage is allright, but not as convenient as some options might be.

A lot of people have MSN messenger and I have many friends that use it for encrypted chat. Most people that I know that use it have the OTR plugin, that enables you to have end-to-end encryption. It's very user friendly. I use Pidgin client and the Pidgin-OTR plugin for that, both are open source. Pidgin supports other protocols too, so I suggest you keep using whatever IM application you have and your friends use and put encryption on top of it. That way it is easy to make a habit of it.

Why don't you just use skype? It is sufficient enough. Only Microsoft can steal your data...

My conversations are of financial interest. AI would likely pick them out :)
