Which chat programs are out there, which encrypt all data you send/receive?
I want to be in control of the keys, and preferably the software should be open source.

http://en.wikipedia.org/wiki/Cryptocat

Cryptocat is an open source web and mobile application intended to allow secure, encrypted online chatting. Cryptocat encrypts chats on the client side, only trusting the server with data that is already encrypted. Cryptocat is offered as an app for Mac OS X or as a browser extension for Google Chrome, Mozilla Firefox, Apple Safari, Opera and as a mobile app for iPhone.

Cryptocat's stated goal is to make encrypted communications more accessible to average users. The chat software aims to strike a balance between security and usability -- offering more privacy than services such as Google Talk or Internet Relay Chat, while maintaining a higher level of accessibility than Pidgin

BitMessage is allright, but not as convenient as some options might be.

A lot of people have MSN messenger and I have many friends that use it for encrypted chat. Most people that I know that use it have the OTR plugin, that enables you to have end-to-end encryption. It's very user friendly. I use Pidgin client and the Pidgin-OTR plugin for that, both are open source. Pidgin supports other protocols too, so I suggest you keep using whatever IM application you have and your friends use and put encryption on top of it. That way it is easy to make a habit of it.

Why don't you just use skype? It is sufficient enough. Only Microsoft can steal your data...
