I have not seen a good end-to-end guide as far as setting up a Non-P2Pool. What I HAVE seen is a lot of people building new pools using a combination of the desired Coin, pushpool, and mmcfe. I looked into it and I may go that way at some point, but I found just setting up a quick P2Pool (pnwminer.com) and inviting friends to join it, is working out fairly well.
