You're asking a lot of exchangers, to ignore the authorities. They rely on banks and easily identifiable servers to operate (TOR is too slow for an exchange, I'd wager.) When those men with guns you mentioned come knocking, what should we expect them to do? Raise a militia and go to war with the state?

And, as the previous person mentioned, bitcoin is not untraceable. Though with some effort you can make yourself reasonably anonymous.

If YOU want to back Bitcoins, offer to sell some commodity at a fixed rate. Why make it more complicated than that?

I've advocated someone take this approach to a physical "bitcoin." Produce a hard to replicate token and make the market for it at a small percentage under and over spot.

Jesus, people! Folks trade goods and services on craigslist all the time! Yes, fraud and theft happens, which is why people take very normal precautions. Don't go and trade $10,000 worth of BTC, obviously. Meet in a public place and keep the transaction total below the amount of money that the most valuable personal item in that public place is worth; which is likely the value of a laptop or smart phone. Plan out the trade to happen before you go off and do something else, like going to see a movie or going for a bike ride or out to eat. If you're only exchanging  tens of dollars worth then you simply won't be worth the trouble.
