I just used trusted gambling sites. They keep all their funds offline anyways, but this doesn't help if it is the site itself that runs off with the coinage. I've been asking people for months to make this! Where the dice go around the table and the player who is rolling picks the random #. Everyone can bet on the table. This would be really really good. PRC is going to have it in the future, but he is trying to lock down the dice perfectly. I'm capping this at 50 people atm and I might roll that back to 10 people (I don't think many will sign up for this, but who knows.)
