For smaller coin you could get your news from research, and you can do it from linkin, or from any social media that your project related in. obviously it will be hard if the project is so small and lack of exposure in the first place, but sure you could find the news from insider such as telegram or medium.
Yes, there is nothing difficult in terms of looking for project news if someone always tries well through several ways, and one of them is like you said, what is difficult here is for those who are lazy to look for it, I think that's it.

Art has never been my area of interest which automatically puts  NFTs off my bucket list. Am certain there is some good in them but tbh these just ain't for me.

And because this is something that came like the crypto kitties game this kind of reminds of it and there is some similarities too, so am staying far away as possible.
The field of art is only liked by people who really love art, so there are some people who don't like NFT because it was born for those who have an art mind only, and I think that's great for the variety of options in the crypto space too.
