If I want to have an airgapped raspberry pi storing my bitcoins how vulnerable would it be to theft (assuming I used a strong password)?  Could the operating system record some information about the seed and store it unencrypted somewhere so if someone took the pi they could figure out the seed?

Would generating my own entropy and using it to create the seed increase that risk?

Would it be recommended to buy a cheap computer or find an old one and use whole disk encryption instead of the pi?

I think a Raspberry Pi is enough airgap as it is. There is no chip or memory that can store info after it's disconnected, everything should remain on the sd with your install.

Theft will only depend on how good you hide your SD and your paper backups

As for entropy, as far as I know it's best not to use manually generated random data (sometimes the data isn't as random as we think it is), but maybe someone can talk about this in a better way than me.
