If it's an actual business just pay the deposit in bitcoins. Make sure to get confirmation via e-mail that he received the funds and you're good to go. When you arrive, pay the rest in bitcoins.

If you pay when you arrive there (aside from the deposit) I don't see much difference from paying in cash when you arrive.

I wouldn't look for an escrow, it makes things too complicated for someone who is willing to help you by getting into bitcoin.

Yes, I got email confirmation of the deposit this morning.
Thanks for the reminder.  I am not sure whether to pay the balance in bitcoin or in cash.
