I don't think we will be seeing something like that again, guessing it's a huge amount of work to keep everything up to date with all the Minecraft updates.
Plus, popularity is really going downhill lately, I don't think we'll see a sudden surge in popularity.

Minecraft's popularity is fading. It might have been a good idea a year or two ago but the longer he waits the lower the chance of success is. Casinos that need a 3d layout will not be successful because they require more time and resources to make and target a limited audience like in this case people who have a minecraft client.
The one thing that was cool about Bitvegas, you didn't need to have a minecraft client to gamble, they offered in browser plugins to gamble with, pretty much just a in browser form of the minecraft client, so the target wasn't limited, but i do see your point on the Huge Amount of work it would take to run/keep the server upto date...
