should I build my 2nd 7970s x3 rig?

I have left over parts and 3x 7970s. Should I build it or just sell the cards?

If you have the parts, put it together. Those cards aren't dropping in value anytime very soon.

Go ahead and build them, if mining Bitcoins becomes unprofitable you can mine Litecoins instead.

it would only take a few days (or a few hours if you've done this a few times already).

If mining then becomes unprofitable in 4-6 weeks you still will have earned 20-40BTC ($240-$480 in todays prices). 

Then you could sell em, and have earned a few extra hundred bucks.  the cards DEFINITELY wouldn't depreciate that much in that amount of time

If it were me, I would grind on them a few more weeks.

If you pay average price for electricity or less (e.g., $0.12 per kWh) then mine away for the next seven weeks, assuming you don't need to make any additional purchases to get it operational.

If you pay way over (e.g., you live in California, Europe, etc.) then cut your losses and sell the hardware sooner rather than later as there is little profit from mining for you.  If you think the BTC exchange rate will rise, then use the proceeds of the sale to buy bitcoins.
