The Bitcoin network protocol was designed to be extremely flexible. It can be used to create timed transactions, escrow transactions, multi-signature transactions, etc. The current features of the client only hint at what will be possible in the future.

The number will increment roughly every 10 minutes. The higher the number, the more difficult it is for the transaction to be reversed. At 6 confirmations, the transaction will be marked "confirmed", since it will be almost impossible to reverse the transaction.

The bitcoins are reflected in your balance now. The number is only telling you that there is a very small chance that the transaction will be reversed.
