How exactly does one go about backing up their wallet, with pen and paper in this case? Fairly sure I've already done it before but have forgotten where I hid the page.

You would usually print the backup, as it comes with the instructions to recover the wallet.

You could write down the backup string as long as you thoroughly test it (you should do that with printed backups as well, of course).
