I was looking through Freelancer (http://www.freelancer.com/) and they have a ton of jobs.

Perhaps someone could create a site where you take the listings from freelancer and post them and display how much you will pay in BTC for the job. Then you submit the job on freelancer with the equivalent dollar price. Once it is complete, you pay the Bitcoin person in BTC minus your cut.

Some vetting and performance measures would be needed for new people applying for projects but using a single company name on freelancer would give more credibility towards the bids.

First seastead company actually selling sea homes: Ocean Builders https://ocean.builders  Of course we accept bitcoin.

Heh, payment method arbitrage.

Wouldn't it be better though if oDesk, Freelencer.com, etc, were to simply offer Bitcoin as a cash-out method (and as a funding method for employers)?

Related:

Incidentally, here's a talk by Michael Levinson, VP of Product, oDesk, which has a lot of freelancers from developing nations.  He describes the challenges to (and importance of) paying those contract workers.  Notice that the bitcoin topic just keeps coming up over and over by those in the audience.  (Which is interesting, because this video is over a year old.)

There isn't much right now, but a freelancer.com for bitcoins *does* exist: BTCworkers.

As for your suggestion of a bitcoin "man in the middle" for freelancer.com, I don't know how feasible such a thing would be. They *do* provide an API which might facilitate something like that, but it sounds like unnecessary overhead and complexity when instead you could just accept bitcoins directly.
